Apple Cobbler Cake
Chef Ellis' use of contrasting textures and temperatures really make the Apple Cobbler Cake. The crunch of the oatmeal streusel complements the warm, tender cake and the creaminess of the cinnamon toast ice cream pairs nicely with the rich, spiciness of the apple compote.
Pumpkin White Chocolate Cheesecake
Chef Ellis likes to call this dessert Pumpkin Cheesecake 2.0 and like the theme of this fall menu, it's another spinoff of a classic dessert. She's added rich white chocolate for depth to the savory cream cheese pumpkin filling with a gingersnap crust for a little zip. The dessert is complete with a ginger molasses cookie.
Sweet Potato Pie Bread Pudding
The inspiration behind this dessert was to utilize sweet potatoes—what Ellis considers one of the most underutilized ingredients for fall desserts—and pair it with unexpected flavors like the maple caramel sauce. The starchiness and flavor of sweet potato lends itself as a perfect ingredient for bread pudding and the housemade marshmallow adds a nice, gooey finish!
